Mini Mocha Muffins as the name suggests are little muffins made using coffee and cocoa. These muffins are an absolute delight for both coffee lovers as well as chocolate lovers. Preparation Time : 10 min
Cooking Time : 25 min
Makes : 6-7 muffins
Ingredients:
All – purpose flour ( 1 cup minus 2 tbsp)
Cocoa Powder : 2 tbsp
Instant Coffee Powder : 2 tbsp
Butter : 1/4 cup
Sugar : 1/3 cup
Honey : 1 tbsp
Water : 3/4 cup
Milk : 3 tbsp
Egg : 1 ( room temperature)
Cooking Soda : 1 tsp
Method of Preparation:
- Take the coffee powder, butter, sugar, honey and water in a pan and place on medium heat. Keep stirring till the sugar dissolves completely. Once the mixture comes to a boil, reduce the flame and let it simmer for 3-4 min. Transfer to a large bowl and let it cool.
- Sift the all purpose flour and cocoa powder together.
- Once the mixture of step one has cooled, add the flour cocoa mixture to it.
- Dissolve the soda in milk and add this to the batter too.
- Break the egg and add it to the batter. Beat well till you have a uniform batter.
- Transfer batter into muffin molds. Fill the molds to around half its size. Bake the mini mocha muffins in a preheated oven (180 deg celcius) for 20 min. Transfer the muffins to a wire rack to cool.
These mini mocha muffins can be relished plain, or dust them with some powdered sugar, or some generous helping of cream cheese frosting. ?

What can be used instead of egg??..

Firstly extremely sorry about a delayed reply. Coming to your query – ground flax seeds and water is typically a good replacement for egg (1 egg = 1tsp flax seeds +1/4 cup water). I have tried it for some other recipes but not this one. Some other well known egg substitutes are apple sauce and mashed banana (1 egg= 1/4 cup). Will definitely let you know when I try any of these replacements for the mini mocha muffins ?
