A very quick and easy to make mini quiche recipe. This mini quiche can be served for breakfast or as an appetizer or snack. I also feel it would be a perfect appetizer for any party.
I had made apple pie yesterday and had some crust dough left over. Today I thought, why not use it in making mini quiche. I quickly put together some ingredients to make the filling for the mini quiche and in half an hour, I had these amazing mini quiches looking at me. They look good, don’t they?
The best part is you can just vary the filling based on your interest. I had broccoli and corn with me in the fridge and used them with the egg. You could also add any other veggies (carrots, capsicum, onion, green peas) to the mini quiche as per your taste and availability.

Makes: 8-10 mini quiches
Preparation Time: 20 minutes
Cooking Time: 20-25 minutes
Ingredients:
To make crust for Mini Quiche
Whole Wheat Flour: 3/4 cup
Cinnamon Powder: A pinch (Optional)
Salt: to taste
Cold Unsalted Butter: 40 gm
Cold Water: 1/4 cup
To make filling for Mini Quiche
Eggs: 3
Salt: to taste
Pepper Powder: to taste
Broccoli florets: 3/4 cup finely chopped
Sweet Corn: 1/4 cup
Cream: 2 tbsp
Cheddar Cheese: 1/4 cup
Cream Cheese: 2 tbsp
Method of Preparation:
To make crust for Mini Quiche
- Pre heat the oven to 180 degrees Celsius. Grease a muffin tray with butter.
- Sieve the whole wheat flour. Add to it the cinnamon powder and salt.
- Add chopped cold butter to the whole wheat flour and mix well with fingertips so that they resemble bread crumbs.
- Add cold water to the flour and gather together all the contents to form a dough. Do not knead. I added a little less than 1/4 cup water here.
- Keep covered with wet cloth to avoid drying out.
To make filling for Mini Quiche
- Beat the eggs. Add salt and pepper and mix well.
- Add cream cheese, cream and cheese and mix well.
- Add broccoli and corn and mix.
Final Steps
- Dust a rolling board with flour. Take a small portion of dough on the rolling board and flatten with palm.
- Roll it out into a disc. Cut into circle with cookie cutter. The size of this circle will depend on the size of your muffin tray slot.
- Place the circle in the greased muffin tray slot and press gently on the bottom and sides. You can also give it a flower shape to make it look more interesting.
- Place it in the oven and bake for 15 minutes. The crust will become slightly brown.
- Remove muffin tray from oven and put 1 tbsp filling in the crust.
- Place in oven and let bake for 20-25 minutes till the egg mixture is set. Note that the time required for the egg mixture to set would vary based on the oven used.
- Serve hot.
