Cooking Time: 25 minutes
Ingredients:
For the filling:
Prawns : ½ cup (small prawns )
Chilli Powder : ½ tsp
Turmeric Powder : ¼ tsp
Spring onion : 1 cup (chopped)
Tomato : ½ cup (finely chopped)
Garlic : 5-6 cloves (finely sliced)
Oil : 3 tsp
Mayonnaise : 2 tsp
Flour – for rolling the dough
Oil : for frying
For the cover:
Wheat flour : ½ cup
All purpose flour : ½ cup
Rice flour : 2 tsp

Method of Preparation:
- Clean and devein prawns. If you have big sized prawns, cut them into smaller pieces. If you have the smaller ones, you can leave them as it is.
- Marinate the prawns using ¼ tsp turmeric, ¼ tsp chilli powder and little salt. Keep aside.
For the cover:
- Mix the flours and salt. Add water gradually and knead till you get a hard dough. Be careful to add water little by little as the dough should not be too soft. Keep this dough aside. This will make the outer-cover for the prawn pockets.
For the filling:
- Heat 3 tsp oil in a skillet. Add garlic and saute for few minutes.
- Once garlic turns slightly brown, add the spring onion and stir for 2-3 min.
- Add the prawns and fry till the prawns are slightly cooked (2-3 min).
- Add chopped tomato, ¼ tsp chilli powder and salt. Stir and keep covered for 3 min.
- Remove lid. In case the mixture is slightly watery, cook uncovered, stirring continuously till you have a dry mixture.
- Cool and add the mayonnaise to this mixture. Your filling for delicious prawn pockets is ready.
The pic below shows the filling before adding the mayonnaise.
For making the pockets:
- Divide the dough into 8 balls.
- Take one dough ball and roll using rolling pin till you have a 6 inch square. In case you roll into a circular shape, cut the sides with a knife to get a square shape
- With a knife, make a slit from the center of the square to the middle of the lower side.
- Place one spoonful of filling in the top left are of the square.
- Fold the lower left square over the filling and press the sides gently.
- Fold this smaller square on the top right side of the rolled square.
- Finally fold the lower flap onto this square with the filling. (The pics below will give you a clear picture of the folding method. This folding order ensures, there are two flaps on both sides of the filling, so that there are no leaks). Repeat this for remaining 7 dough balls.
- Heat oil in a skillet. Deep fry the pockets till golden brown. Your delicious prawn pockets are ready.
