Vegetables in White sauce is a creamy side dish of mixed vegetables tossed in white sauce. Serves as an excellent accompaniment to any meal.

Ingredients:
Carrots: 1 and 1/2 cup cut into small cubes
Potato: 1 cup cut into small cubes
Cauliflower: 1 cup cut into small florets
Green Peas: 1/3 cup
French Beans: 3/4 cup cut into small pieces
Salt: to taste
Milk: 2 cups
Butter: 1 tbsp
All Purpose Flour: 1 and 1/2 tbsp
Cheese: 3/4 cup grated
Pepper Powder: 1/4 tsp
Dried Oregano: 1/4 tsp
Dried Basil: 1/4 tsp
Method of Preparation:
- Take all the mixed vegetables and salt in a pan and add sufficient water. Boil the vegetables till soft. Drain and keep aside.
- In a pan, melt the butter.
- Add the all purpose flour and stir fry for 1-2 minutes.
- Add milk and bring to boil.
- Add cheese, salt, pepper, oregano and basil and mix well. Let cook on low heat till the sauce thickens.
- Add the vegetables to the white sauce and mix well. You can serve it hot or cold. I prefer the one which is refrigerated for some time.
