Chicken Pasta in Tomato Basil Sauce

Pasta is enjoyed equally by kids as well as adults. This Chicken Pasta recipe is sure to be an instant hit among all. The tomato and basil sauce gives a beautiful flavor which is sharp yet mild. As with any pasta recipe, the trick is to boil the pasta right and balance the sauce flavors well. Pasta is ideally to be cooked and eaten immediately as it tends to become dry as it cools. Since I typically make dinner before hand and just heat it while serving, adding some sauce while serving helps maintain the right balance. Thus I often reserve some sauce and use it while serving. Also it gives a more restaurant style look to the dish :) But if you do not wish to prepare the sauce separately, you can simple increase the quantity of the main sauce.

Below is a step by step method with pictures to show how to make this chicken pasta in tomato basil sauce.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves : 2

Ingredients:
Pasta : 1 1/2 cup (around 140-150 gms)
Tomatoes : 2 large (roughly pureed)
Onion : 1 medium (finely chopped)
Garlic : 4-5 cloves (chopped)
Basil leaves : 1/4th cup + some more for garnishing
Chicken : 1/3 cup (cut as bite-sized cubes)
Oil : 2 tsp
Pepper : as per taste
Salt : as per taste

For the topping sauce:
Tomato : 1 large (pureed)
Garlic : 2-3 cloves (chopped)
Basil leaves : 4-5 (roughly chopped)
Oil : 1 tsp
Chicken Broth : 2 tbsp
Pepper : as per taste
Salt : as per taste

Method of Preparation:

  1. Boil Pasta as per packet instructions. Its always recommended to add a tsp of olive oil while boiling pasta to avoid them from sticking.
  2. Boil Chicken in around 1 cup water and salt. Do not discard the water as you can add it to the sauce for additional flavor. Do not over boil the chicken. Remove from flame when it appears white. It will get cooked further along with the pasta sauce.
  3. Add oil in a sauce pan and keep on medium heat. Add chopped garlic and let it fry for a min.
  4. Add onion and let it cook for 3-4 min.
  5. Add the tomato puree, basil leaves, boiled chicken pieces and around 3 tbsp of the chicken broth. You can increase or decrease the amount of broth to get the desired consistency for the sauce.
  6. Cover and cook for 3-4 min. Open the lid and you will observe that the sauce has thickened a little. Add salt and pepper and simmer for another 2-3 min.
  7. Add the boiled pasta to the sauce and mix gently. Simmer for another 3-4 min. Your chicken pasta in tomato basil sauce is ready.
  8. For the topping sauce, heat oil and add the garlic and simmer for 2-3 min. Add all the other ingredients and bring it to a boil. Once the sauce begins to thicken a little, switch off the flame. (The sauce shouldn’t look watery. )
  9. Garnish the chicken pasta with the topping sauce and basil leaves and serve hot.

Notes
If you do not wish to make a separate topping sauce, you can simply increase the quantity of the main sauce. This will ensure your chicken pasta isn’t too dry.
