I am always on the hunt for new chicken starter recipes. Some dry chicken and a fresh salad is our favorite combo for dinner these days. Mostly the honey pepper chicken or similar starters I tried at restaurants seemed deep fried. Now deep fried recipes are definitely yumm, but I try to reserve them for special occasions for obvious reasons ?
So here I came up with a simple and easy to put together recipe. (With a toddler around, recipes which are quick to make definitely earn more brownie points).
I typically team up this dry chicken dish with Russian Salad, Mixed Veggies in Vinaigrette dressing, Spicy Potato Salad or Brocoli Babycorn Stir Fry.

Coming back to Honey Pepper chicken – here are the simple steps to this succulent starter ?
Serves: 2
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Ingredients:
Chicken Strips : 1 cup
Pepper Powder : 3/4 tsp + 1/2 tsp
Garlic : 1.5 tbsp (finely grated)
Honey : 2 tbsp
Capsicum : 1/2 cup (cut lengthwise)
Oil : 2 tbsp (for frying)
Olive Oil : 1 tbsp
Lime juice : 1 tsp
Salt : as per taste
Method of Preparation:
- Apply the grated garlic, 3/4 tsp pepper powder and salt evenly to chicken strips and leave it aside for marination.
Keep aside for at least 1.5 hours. - Heat oil in a pan and place the marinated chicken strips. Once one side appears white, turn them over carefully so that they are cooked uniformly.
- In the meanwhile, add honey, olive oil, lime juice and 1/2 tsp pepper powder to a large bowl and mix well.
- Once the chicken pieces are cooked well, remove from pan and put in the bowl mentioned in step 3. (Some of the garlic flakes would still be on the pan, and that is fine. )Mix gently to coat the chicken pieces uniformly with honey lemon mix.
- In the same pan used for frying chicken, add a tsp oil and lightly fry the capsicum. Spread the capsicum over the chicken pieces and serve.
