This cheese veg open sandwich is an excellent snack or breakfast option. They are quite easy to make and serve as a special treat with quite simple ingredients. A mix of vegetables, topped with cheese and baked, makes this open sandwich tasty and healthy. I typically make it for weekend breakfast to give a special start to Saturday mornings. Typical Saturday breakfast involves eggs and so Quick Quiche, Breakfast Casserole and Egg Muffins are the most common on my menu. For the vegetarians, I think Tomato Cheese Muffins and Corn Appe are some great quick yet special breakfast options.
Cheesy veg open sandwich can also serve as a great snack or starter for parties. I often keep the vegetable mixture ready before hand and just arrange and pop it in the oven before serving ?

Ingredients:
Brown Bread : 8 slices
Spring onion : ½ cup (chopped)
Onion : 2 small (chopped)
Carrot : ½ cup (grated)
Cabbage : ½ cup (finely chopped)
Oil : 3 tsp
Chilli powder : ¼ tsp
Tomato Chilli sauce : 2 tbsp
Tomato Puree : 4 tsp
Butter : 1 ½ tsp
Cheese : 1 cup (grated)
Sugar : ¼ tsp
Salt – a pinch
Method of Preparation:
- Take oil in a skillet. Add chopped onion.
- Once onion turns slightly soft, add the spring onion and fry till it turns soft.
- Add in the carrot and cabbage and stir for around 3 min.
- Add the tomato puree, tomato chilli sauce, chilli powder, sugar and salt and cook for another 4-5 min on low flame
- Remove from flame and add two tsp of cheese and mix.
Take a slice of bread and apply butter lightly. Take a portion of the vegetable mixture and spread evenly. Sprinkle grated cheese on top. Cut the slice into two. - Bake in a preheated oven( 190 degree Celsius) for 20 minutes.
