Breakast Casserole is a simple yet special recipe. It requires simple ingredients and is fairly simple to make. This breakfast casserole is a great option for the days when you want to make something different for breakfast but haven’t planned in advance.
How much ever I like planning in advance, there are days when I wake up and the ‘oops! what to make for breakfast today? ” question mark poses in front of me. I am glad I now have a list of recipes(Whole Wheat Pancake, Quick Quiche (1 min recipe), Corn Appe, Tomato Cheese Muffin,Methi Appe, Egg Muffins …)that come to my rescue ? .
The breakfast casserole recipe here combines the goodness of milk and eggs it turns out to be a fairly nutritious one. Below are step by step instructions with pictures of making this breakfast delight.
Serves: 2
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Ingredients:
Tomato : 1 (roughly chopped)
Onion : 1 (cut vertically)
Bread Slices : 4 (cut into cubes)
Mozzarella Cheese : ¼ cup
Garlic cloves : 4 (finely diced)
Eggs – 3
Milk : ½ cup
Oregano : 1 tbsp
Olive oil : 1 tsp
Pepper : as per taste
Salt : as per taste
Method of Preparation:
- Mix the olive oil, tomato, onion, garlic, oregano, salt and pepper.
- Transfer to a microwave safe dish and microwave on high for 5-6 min. If not using microwave you can put on a frying pan and saute till the onion and tomato are slightly soft.
- In the meanwhile, add eggs, milk and little pepper (as per taste) in a bowl and whisk well.
- Add the bread pieces to the onion tomato mixture and mix gently.
- Add the whisked egg mix and mix to gently coat the bread pieces. Be careful not to smash the bread completely.
- Add the cheese and give a light stir and bake in a preheated oven (180 deg celcius) for 20-25. min until the top is a bit golden and crusty. Yummy Breakfast Casserole is ready.
If you are using a microwave oven, you would have to switch to convection mode for the baking.
