Feeding veggies to kids is usually a huge task for most parents. Often veggies have to be disguised with something else or sneaked into your kid’s favorite food. Imagine your kid asking you to make a snack loaded with vegetables for him/her. Now wouldn’t that make every mom’s dream come true?
Here is a perfect recipe which combines a lot of different vegetables into a snack which your kid is sure to enjoy. My toddler loved it and I had to make it again for her tiffin box the next day 🙂
Serves: 3-4
Preparation Time: 15 minutes
Cooking Time:Â 15 minutes
Ingredients:
Potatoes: 3 and 1/2 cups boiled and mashed
Green Peas: 1/2 cup
Beetroot: 1 and 1/2 cup peeled and grated
Carrots: 1 and 1/2 cup peeled and grated
Chili Powder: 2 tsp
Turmeric Powder: 1/2 tsp
Chat Masala: 1 tsp
Coriander Powder: 1/2 tbsp
Cumin Powder: 1/2 tbsp
Coriander: 1/4 cup finely chopped
Mint leaves : 1 tbsp finely chopped
Ginger Paste: 1/2 tsp
Garlic Paste: 1/2 tsp
Cornflour: As required
Bread Crumbs: As required
Salt : a pinch
Method of Preparation:
- Microwave the green peas for a minute so that they become soft. Mash them lightly.
- In a pan, heat 1 tbsp oil and stir fry the ginger and garlic paste briefly.
- Add beetroot and carrot and stir fry for 2-3 minutes.
- Add coriander and mint leaves and mix well. Add chili powder, turmeric powder, chat masala, coriander powder and cumin powder and mix well.
- Add mashed potatoes and green peas and mix well.
- Take a small portion of this mixture and flatten it. You can cut it into desired shape using cookie cutter. I just preferred the normal circular shape this time 🙂
- Make cornflour paste. Dip each cutlet in the cornflour paste and then roll in bread crumbs.
- Heat oil in a flat frying pan and shallow fry the cutlets till golden brown on both sides.
