Spinach Cheese Corn Tikki is a shallow fried tikki recipe that combines the ‘not so loved’ spinach with the ‘loved by all’ corn and cheese combination. ? The corn cheese mixture is stuffed inside the tikkis which comes as a beautiful surprise as you cut through or bite through the soft tikki.

Below is a step by step recipe for making the Spinach Cheese Corn Tikkis.
Makes : 7-8 tikkis
Preparation Time : 20 min
Cooking Time : 15 min
Ingredients:
Spinach leaves : 10-12
Potato : 2 medium (Boiled and smashed – 1 heaped cup)
Beaten Rice (Poha) : 3/4th cup (1 cup after being soaked) (This can be replaced by bread crumbs)
Green Chilli : 1 (finely chopped)
Cumin Powder : 1/2 tsp
Coriander Powder : 1/2 tsp
Corn Kernels : 1/2 cup (boiled)
Cheese (4-5 tbsp) grated
Salt : as per taste
Oil : for shallow frying the tikkis
Note : The beaten rice needs to be soaked in just the right amount of water. The purpose of the beaten rice is to add firmness to the dough and making the beaten rice too wet, will not serve the purpose. You can use bread crumbs instead of beaten rice if you prefer.
Method of Preparation:
- Heat water in a large bowl. Add the spinach leaves and leave them in it for 3 min.
- Remove from water and transfer to a bowl containing ice cold water. Keep for 5 min.
- In the meanwhile add the corn kernels and cheese in another bowl and mix well. Keep aside.
- Remove the spinach leaves from water and chop them finely.
- Add the chopped spinach leaves, boiled potatoes and soaked beaten rice to a large bowl and mix well. The amount of beaten rice can be varied. Basically you need to add as much required to get the dough firm enough to be formed into tikkis.
- Divide this dough into 7 to 8 parts. Take one part on your palm and gently flatten it into a circle of approximately 5 cm diameter. Take 1 heaped tsp of the corn cheese mixture and place it in the center of the flattened spinach potato dough. Gently bring the ends together to encapsulate the stuffing into the tikki. Flatten lightly. Repeat with remaining parts.
- Heat little oil in a frying pan. Shallow fry the Spinach Cheese Corn tikkis till lightly golden brown on each side.
Serve these Spinach Cheese Corn Tikkis with tomato chilli sauce.
