Weekend breakfasts deserve to be special. I am constantly looking for some easy yet some interesting breakfast ideas. Some of my current hits are Quick Quiche (1 min recipe), Breakfast Casserole, Methi Appe, Tomato Cheese Muffins, Corn Appe. Presenting some special weekend breakfast makes me really happy. But busy weekdays often make the pre-planning tough. Hence instant recipes which do not need any planning are a savior. Here is a recipe that does not need to be planned in advance, and yet is a good change over the routine breakfast options.

Cooking Time : 15 min
Ingredients:
Bread : 8 slices
Milk : 1/2 cup
Eggs : 3
Sugar : 1/2 tsp
Chilli Powder : 1/2 tsp
Turmeric Powder : 1/4 tsp
Cheese : 1/3 cup
Capsicum : 1/4 cup (finely chopped)
Salt : as per taste
Oil : for shallow frying the stuffed french toasts
Method of Preparation:
- Break the eggs in a medium size bowl. Add milk, sugar, turmeric powder, chilli powder and salt. Beat well.
- Mix the Capsicum and cheese with a pinch of salt in another bowl. Keep aside.
- Heat a pan and add half a teaspoon of oil.
- Take a bread slice and dip in the beaten milk-egg mixture. Place this bread on the heated pan.
- Take a tablespoon of the cheese capsicum mixture and spread evenly on the bread.
- Dip another bread in the egg-milk mixture and place it to cover the capsicum cheese mixture. (refer pics below). Gently press the edges to seal the two bread slices.
- After 3-5 min, gently flip to cook the other side. Once both sides are evenly browned, remove from flame. Repeat with remaining bread slices.
Serve the stuffed french toasts hot with some tomato sauce.

- Capsicum : ¼ cup (finely chopped)
- Salt : as per taste
