Breakfast fusion is an easy to put together breakfast recipe. The recipe basically combines three separate components – the lower crisp hash brown layer, followed by a layer of spicy tangy beans and topped by a simple fried egg. Together these three layers pose as a complete breakfast plate – healthy and yummy!
Weekends always deserve some special breakfast. Since weekdays breakfast are often quick ones, I try to put up something special for weekends. But I need to catch up on my sleep too. Hence I often try some recipe, that doesn’t take much time (Whole Wheat Pancakes, Tomato Cheese Muffin, Quick Quiche, Breakfast Casserole . Or I look for some recipe, where some of the components can be prepared in advance. This Breakfast fusion is one such beautiful combo. I typically prepare the beans the previous night. This breakfast fusion recipe combines the goodness of eggs, potato and beans. I made the beans slightly spicy as I thought that would blend well with the crisp hash brown and the plain(no salt pepper) fried eggs.

Ingredients:
Potato : 2 medium (peeled and grated)
Red Cow peas : 4 tbsp (soaked and boiled)
Onion : 1 small (finely chopped)
Tomato : 2 medium (roughly chopped)
Ginger garlic paste : 1/2 tsp
Garlic cloves : 3-4
Chilli powder : 1/2 tsp
Eggs : 3
Butter : 2-3 tsp
Salt : as per taste
Oil : for frying the eggs
Method of Preparation:
- Grind together the tomato and garlic to a paste and keep aside.
- In a skillet add 2 tsp of oil, ginger garlic paste and onion and fry till the onion turns soft. Add the tomato garlic puree, chilli powder and salt and mix well. Add the boiled beans and let it simmer till it becomes a thick gravy. Your one layer of breakfast fusion is ready. Keep aside.
- For the hash potatoes,wash the grated potatoes thoroughly. Squeeze to remove any water. Add some salt and keep for 2-3 min. Once again squeeze well to remove any water.
- Heat a pan. Spread around 1/4 tsp butter evenly on the pan. Spread a thin layer of the grated potatoes on the pan with your hand. Add some more butter along the sides. Once the lower side appears golden brown, gently turn it and let it brown on the other side as well. Remove from flame and spread on a serving plate. (The hash brown may tend to break. That is fine as far as the potato is cooked and crisp.)
- Add a little oil on a pan, and break an egg. (Do this gently as we don’t want the white and yellow to mix.) Once the egg white has turned firm and the yellow is also slightly firm, its time to get the plate ready.
- Add a layer of beans on the serving plate with hash brown. Spread the bean layer gently on the hash brown.
- With a spatula, remove the fried egg from the pan and place on the the beans layer. Garnish with coriander and serve hot.
