This is the recipe I follow when I feel like having some hot chicken curry but have only some time at hand. Its quick and simple to make and yet very delicious.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Ingredients:
Chicken : 400 gms
To make marinate:
Coriander : 1 cup
Ginger : 1/2 inch
Garlic : 7-8 cloves
Green Chillies : 2
Curd : 1/4 cup
Chilli powder : 3/4 tsp
Turmeric powder : 1/4 tsp
Oil : 2 tbsp
Salt : to taste
For the gravy:
Onion : 2 large (finely chopped)
Tomatoes : 2 Medium (finely chopped)
Ginger Garlic paste : 1 tsp
Chilli power : ½ tsp
Turmeric Powder : ½ tsp
Chicken Masala Powder: 3/4 tsp
Salt : to taste
Method of Preparation:
For marinating the chicken:
- Grind the coriander, ginger, green chillies and garlic to make a fine paste.
- Add this paste, chilli powder, turmeric powder and salt to the chicken pieces and mix to ensure the marinate is applied evenly. Keep the marinated chicken aside.
For making the gravy
- Heat 2 tsp oil in a sauce pan. Add onion and stir occasionally till the onion turns soft.
- Add tomatoes and cook till the onion tomato mixture leaves oil.
- Add the chilli powder, chicken masala powder, and salt (Remember you have already added some salt while marinating the chicken) and stir constantly for 2 min.
- Add the marinated chicken pieces and keep covered for 8-10 min on medium flame.
- Open the lid to check if the gravy is too dry. If required add two tbsp water, stir and let it cook uncovered for another 5 min.
- Garnish with coriander and your simple and yummy chicken curry is ready. Serve with hot rotis or bread.
