Cucumber Raita or Cucumber Salad is a simple recipe which combines the goodness of cucumber and yogurt. It is usually served with Pulav or Biryani. I have tried serving this cucumber raita with Green Peas and Mint Pulav and Mushroom Biryani and it was loved by all.
Cucumber is known to be made up of 95% water and eating it on a hot summer day can help you keep hydrated. Hence it is a perfect vegetable to beat the scorching summer heat. It is a low calorie vegetable which is rich in dietry fiber which helps reduce constipation. However, not everyone likes to eat plain cucumber. This includes me too. Though I like cucumber, I cannot just eat it plain. I either like to eat it as a part of a salad (Thai Mango Salad, Raw Mango Salad, Cucumber Raita/Salad) or as part of a sandwich (Cucumber Tomato Sandwich) or sometimes as a part of a cool drink (Cucumber Cooler). May it be in whatever form, cucumber always gives you a very refreshing effect.
