A Frittata is an egg-based Italian dish similar to an omlette. It can be made by adding different vegetables, cheese and meat. The recipe here uses potato as the main vegetable and hence this one gets quite filling and can serve as a meal in itself. You can cut it into small squares, insert tooth-pick in each square and serve it as an appetizer too.

Ingredients:
Eggs : 5
Potato : 1 (cut lengthwise)
Onion : 1 (finely chopped)
Capsicum : 1 (finely chopped)
Pepper: as per taste
Salt: as per taste
Method of Preparation:
- Break the eggs in a large bowl and beat well. It should become a frothy mix. Add salt and pepper and beat again.
- Heat oil in a frying pan. Once the oil is hot, add the potatoes and fry them well but be careful not to brown them.
Remove the potatoes from flame and keep aside.Sprinkle some salt. - Add onion to the same pan and fry till onion turn soft.
- Add capsicum and fry for 2 minutes. Sprinkle some salt and mix.
- Remove the onion capsicum mixture from flame and keep along with potatoes. Remove any tiny bits that have remained on the pan with a tissue.
- Add these veggies to the beaten egg mixture and stir lightly. Be careful not to break the potato wedges.
- Pour this entire mixture on a hot frying pan. Cover the pan and let it cook for 4-5 minutes on low -medium flame. Basically when you open the lid, the middle of the pan should not look wobbly. That is when you know the frittata is ready. Also it should move about freely when you swirl the pan. If not, you may need to give a slight help with a spatula. Once it is ready, remove pan from flame, cover with a plate and turn the pan upside down. The frittata should drop in the plate
