Pumpkin with dried shrimps or Dudhi Bhaji with dried prawns is a simple recipe in which pumpkin/dudhi and dried prawns are cooked together into a mouth-watering dish. This is a Goan recipe which combines together the goodness of pumpkin and the delectable taste of dried prawns.
While I make the Dudhi Bhaji without onion and garlic several times, this is the first time I attempted to make this pumpkin with dried shrimps. My mother in law makes it very often and I learnt this recipe from her. It can be served with both rice and rotis.
Here is the step by step recipe for pumpkin with dried shrimps:
Serves: 3-4
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Ingredients:
Pumpkin: 3 cups chopped
Green Chilies: 2 slit vertically
Onion: 1 finely chopped
Dried Shrimps: 1/2 cup
Scrapped Coconut: 2 tsp (optional)
Jaggery: 1 tbsp
Salt: to taste
Oil: 1 tsp
Method of Preparation:
- Heat oil in a pan. Add onion and green chilies and stir fry till translucent.
- Add dried prawns and stir fry for a minute.
- Add little water and close lid. Cook till prawns turn soft and are almost cooked.
- Add pumpkin and mix well. Add little water and let cook.
- Once pumpkin is cooked, add coconut, jaggery and salt and mix well. Let cook for a minute. Your delicious Pumpkin with Dried Shrimps is ready.
