There are days when I just feel like eating salads. Such days typically come when I have eaten too much of non-veg or I have gorged too much on desserts and i feel its time to cut down on the calories a little
Yesterday was one such day and luckily for me hubby was in a salad-only mode too. Immediate thought on my mind was my all time favorite Russian Salad.. but no, didn’t want a mayonnaise dressing today. Next my thoughts switched to Sweet Potato and Beetroot Salad and Spicy Potato Salad. But hubby was in mood of a salad with lots of veggies. So we started listing some of the best salads we have eaten. One such salad that came to our mind was Thai Mango Salad which we would order every time we visited one fine-dining restaurant at MG road, Bangalore. I remember we had tried a similar salad at Pattaya, Thailand as well. We had always loved it. Thus Thai Mango Salad was finalized 
Thai Mango Salad -The sweet and sour taste of raw mango gives a unique freshness to this salad. The crunchy peanuts also contribute beautifully to this veggie-loaded bowl.
As with most salads, the only time consuming part is the vegetable cutting. This one takes a little more time as all vegetables are to be chopped as thin long strips. If the strips seem too long, you can give one diagonal cut. Refer pics below.

Ingredients :
Raw Mango : 1 (sweet and sour variety)
Carrot : 1 (large) (cut lengthwise like matchsticks)
Red Bell Pepper : 1 (cut lengthwise – thin and long like matchsticks)
Cucumber : 1 (de-seeded and cut like matchsticks)
Cabbage : 1/4 th cup ( cut into long thin sections)
Cherry Tomato : 6 (each cut lengthwise into 6 parts)
Spring Onion : 1/4th cup
For the dressing:
Lemon juice : 4 tbsp
Soya Sauce : 1 tbsp
Olive Oil : 1 tbsp
Vinegar : 1 tbsp
Chilli flakes : 1-2 tsp
Sugar : 1/2 tsp
Garlic : 3 cloves (finely chopped)
For topping:
Roasted Peanuts : 1 tsp (chopped or crushed)
Method of Preparation:
- Mix all the ingredients mentioned for the dressing and keep aside.
- Add all the vegetables except raw mango in a huge bowl.
- Add the dressing and mix lightly to ensure the vegetables are coated with the dressing, Be careful not the break the delicately chopped vegetables.
- Add the raw mango and mix lightly again.
- Add the chopped peanuts and give a slight stir. Serve cold.
