Coffee Cookies

Coffee Cookies are sure to be loved by anyone who loves the coffee flavor. And the plus point of these cookies is that they are made of whole wheat flour and not all-purpose flour. :) So these coffee cookies kind of call for a partial guilt free indulgence :) Of course they do contain butter and sugar so its better not to over indulge ;). But yes, these coffee cookies are definitely healthier then the store bought cookies :)

Given our busy schedule it is almost impossible to make some fresh healthy snack every day. Though I try to make some easy and healthy snacks like Tomato Salad cups, Sprouts Chaat, Cucumber Apple Salad etc, making it everyday is sometimes not possible. But on such days seeing my husband gorge on store brought cookies once again rings the “biscuit ke naam pe maida kha rahe ho” advertisement in a continuous loop. Thus to break through this guilt of watching him eat that junk, I am constantly on the look out for some wheat based cakes and cookies (Wheat Chocolate Chip, Oats Raisin Cookies, Whole Wheat Cookies(using jaggery) ).

Below is a step by step procedure with pictures for making these yummy and crunchy coffee cookies.

Makes : 12- 15 cookies
Preparation time : 15 min
Cooking Time : 10-12 min

Ingredients:
Sugar : 1/3 cup
Brown sugar : 1/2 cup
Unsalted Butter : 1/2 cup (softened)
Oil : 3 tbsp
Vanilla essence : 1/2 tsp
Egg :1
Whole Wheat Flour : 1 n 1/4 cups
Baking Soda : 1 tsp
Instant Coffee Powder : 1/2 – 3/4 tsp
Salt : a pinch

Method of Preparation:

  1. Add the sugars, eggs and Vanilla Essence in a large bowl and beat well.
  2. Add the butter and oil and mix.
  3. Add in the wheat flour, instant coffee powder, baking soda and salt and mix till you get a dough. Initially add just one cup of wheat flour and add the remaining gradually till you get a dough.
  4. Divide the dough into 12-15 circular portions. Gently flatten each portion with your palm.
  5. Preheat oven to 190 deg celsius and bake for 10 – 11 min. You will start getting a beautiful cookie smell as the coffee cookies get ready.
  6. Remove the cookies from the oven, they will be slightly soft on top but well formed. The cookies will appear brownish on top. Cool on a wire rack and the cookies will harden and your crispy crunchy coffee cookies are ready.

Note : These cookies have a mild coffee flavor. If you love coffee and prefer a stronger one, you can increase the amount of instant coffee powder used in this recipe. You could check the smell or taste the dough to decide on the amount of instant coffee.
