A dessert with strawberries always brings smiles. It pleases your eyes as much as it pleases your taste buds. And the chocolate chips only act as a cherry on this berry cake 
This cake with a crusty top and moist center was loved by all at my home. Do try this recipe.
Preparation Time: 20 minutes
Cooking Time: 45 minutes
Ingredients:
All purpose flour : 1 n ½ cup
Baking powder : 1 n ½ tsp
Unsalted Butter : 3 tbsp
Curds : 3 tbsp
Sugar : 1 cup
Egg -1
Milk : ½ cup
Vanilla Essence : ¾ tsp
Chocolate Chips : ¾ cup
Strawberries : 10 (3 chopped and remaining cut into halves)
Salt : a pinch
Butter – 1 tsp ( For lining the cake tins)
All Purpose Flour – 2 tsp (For lining the cake tins)
Method of Preparation:
- Prepare the cake tin by placing a parchment paper and buttering lightly and sprinkling all purpose flour lightly.
- Sift cake flour, baking powder and salt together 3-4 times. Keep aside.
- Add butter, curd and sugar to a mixer and beat well.
- Add egg and run the mixer for another minute till the mixture is light and fluffy.
- Add milk, vanilla and run mixer for another 20 seconds.
- Add this mixture to the flour mix and stir gently till both are combined.
- Add chocolate chips to this batter and 3 chopped strawberries and mix gently.
- Pour the batter to the prepared tin.
- Preheat oven to 160 degrees and bake for 45 min. You know its done when a skewer inserted in the center of the cake comes out clean. Once cake is ready, get it out of oven and place the tin on a cooling rack. Invert the tin and gently remove the parchment paper. The top of this cake is a bit crusty and that only makes it more tasty.
Note: For cakes, its always better to get the eggs at room temperature before adding. So I get the eggs out of the fridge atleast 30 minutes before I start making the cake. Also over mixing the batter can result in a harder cake. So the mixing should be gentle just to incorporate all the ingredients together.
