No onion no garlic

Amlechi Uddamethi (Goan Raw Mango Curry)

The word Uddamethi comes from two words- Udda (Urad Dal) and methi (Fenugreek seeds). Amli is raw mango in konkani. This preparation does not use onion and garlic and hence is commonly made on festivals and special occasions which call for pure veg (without onion and garlic) recipes.

This recipe can also be prepared using Ambade (Spondias, hog plums, Spanish plums, libas). In Goa, Amlechi Uddamethi is commonly eaten with Rice.

Almond Soup

Almonds as we all know are excellent for the brain. Besides they also have several other health benefits – they help in development of strong bones and teeth, lower the rise in blood sugar after meals and are also known to aid in weight loss if taken in the right quantity. I also like this recipe for another reason – you can use any white vegetable to make the vegetable paste. I have earlier tried it with ridge gourd – a vegetable which is otherwise not liked much at my home. So you can almost select any white vegetable which you want to include in your loved ones diet but is not appreciated by them in the direct form. 🙂 If you wish you can also include 1-2 drops of almond essence to get a more prominent almond flavor, but I prefer to skip that.

A perfect recipe for the days on which onion and garlic is a strict NO 🙂 Enjoy it with rotis or eat it as a side dish with rice.

C3 Paratha

C3 – Corn, Cheese, Capsicum Paratha.:)

This recipe was a block buster hit on my no-onion-garlic day. Its very tasty and pretty easy and quick to prepare. I think it will also be a good lunch box recipe for kids.
