I love fruit based cakes. The flavor orange brings about to cakes and cookies – sometime by only including orange rind also is truly yummm
The recipe mentioned here includes orange juice and orange rind. Before serving you can coat it with orange Marmalade or serve with a scoop of chocolate icecream or serve plain – thats the way I love it – simple tea time cake 
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Ingredients:
All purpose Flour : 1 cup
Powdered Sugar : 1/2 cup
Baking Powder : 1/2 tsp
Baking Soda : 1/2 tsp
Milk : 1/3 cup
Fresh Cream : 1tsp
Vegetable Oil : 1/4 cup
Orange zest : 1 tsp
Orange juice : 3 tbsp
Vanilla essence : 1/2 tsp
Egg : 1
Orange Marmalade : 4 tbsp (optional) for the glaze.
Salt : a pinch
Method of Preparation:
- Sift flour, sugar, baking powder and baking soda and keep aside.
- Add oil, milk, cream, orange juice, orange zest, egg and vanilla essence in a bowl and whisk well.
- Slowly add the flour and mix gradually.
- Pour into a greased pan and bake in a preheated oven (180 degrees) for 14-15 min – basically till a skewer inserted comes out clean.
- Remove from oven and cool on a wire rack. Spread a layer or orange marmalade and enjoy.
The marmalade glaze mentioned in this cake is optional, and it can be had plain like a tea-time cake.
I personally love it that way.
