Prawn and Orange Salad

The spicy fried prawns and the the tangy sweet taste of orange is a unique medley indeed. If you love prawns you are sure to love this salad too.

This summer we have switched to salads as a way of beating the heat. Just don’t feel like having full meals during when the temperatures are moving up. Chicken Cafreal and Russian Salad is an all-time favorite combo at my home. Chicken Pineapple Salad and Sweet Potato and Beetroot Salad are some of my personal favorite salads. I had been wanting to try a sea-food salad for a while. Both hubby and me love seafood and prawns definitely top the seafood list for us. We had tasted a dish with prawns and orange as the key ingredients during our trip to Malaysia two years back, so this recipe was on the to-be-tried list for a long time.

Serves: 2-3
Preparation Time: 10 minutes
Cooking Time: 5 minutes

Ingredients:
Prawns : 10-12
Orange : 1 (skin and seeds removed)
Lettuce leaves : 7 (roughly torn)
Cheese cubes : 1 (cut into small cubes)
Oil : 3 tsp

For marinating prawns:
Chilli Powder : 3/4 – 1 tsp
Turmeric Powder : 1/4 tsp
Salt : as required

For the dressing :
Olive Oil : 3 tsp
Fresh Orange Juice : 4 tbsp
Pepper powder : 1/4th tsp
Lemon juice : 1 tsp (optional – only if orange juice is very sweet)
Sugar : a pinch
Salt : a pinch
Method of Preparation:

  1. Marinate the prawns and keep aside for atleast an hour.
  2. Heat oil in a pan and fry prawns till they are well done. Turn in between so that they are cooked well. Remove from flame and keep aside till they reach room temperature.
  3. Mix all the ingredients mentioned for the dressing in a small bowl.
  4. Plate the chopped letuce leaves, Orange pieces, prawns and cheese. Pour half of the dressing over it and keep in refrigerator. Use the remaining dressing as required while serving.
